Spinach artichoke chicken

Tonight I was craving spinach and artichoke dip, but wanted to have a real meal instead of just snacking on chips. So I decided to make a spinach and artichoke chicken dish.

To do so, I took some fresh spinach and sauteed it for 5mins. I added some dried onion, and garlic powder, salt and red pepper. I then combined this with a generous serving of artichokes and a tablespoon of Smart Balance Mayo.

I topped my chicken breast with the mixture and baked it in the oven for 10mins. During the last two minutes, I added 2tbsp of mozzarella cheese.

The result was delicious. Warm and gooey, hearty and healthy. It was super easy and an affordable dish to make.
